This coffee is grown in the Frijannes region of Guatemala. Being the oldest coffee stock in Guatemala, it has the most unique flavor combining a nutty body, a caramel tones with medium acidity, and a bittersweet finish. Central American coffees are known for over powering acidity, but Palo Alto Azul maintains a good balance." Finca Agua Tibia, where Palo Alto Azul is grown, is over 150 years old, and originally was founded by Franciscan monks in 1876. Coffee production began in the 1940’s and is all old growth varietals. All of the coffee is shade grown, and Palo Alto Azul is actually translated as “tall, blue tree”. The processing methods are extremely primitive; all coffee is hand-sorted and wet processed by hand using fresh mountain stream water. The farmer’s strictly adhere to old traditional methods, which exclude any use of machinery, as a way to ensure quality and consistency. The farm, of which 75% is a nature preserve, is also home to an ornamental nursery and an award-winning dairy. "
